Today my praktik class start like usually,  we are one-line in front of kitchen for grooming inspection and utensils inspection.  After that we are one-line in cold kitchen and directly reviewd by incharger senior.

After that we immediatly continue what we prepare yesterday.  For today my group just make hollandaise. The hollandaise is used as a sauce for chicken liver.
Hollandaise recipe :
2 tbsp White wine vinegar
1 Bay Leaf
1/2 tsp Black peppercorn
3pcs Egg yolks
200gr Unsalted butter
A pinch Salt and pepper

After that sauce is done,  we continue that chicken liver that we prepare tomorrow. That chicken liver just have to bake but before we bake it roll it it with smoked beef and rub the top with white egg.

After all of the activities is done we have to do general cleaning.
