Today the class is divided into two
groups, some group are still continuing to work on lunch boxes for the job fair
and some group are already included in pastry and bakery learning. In this
week's practice we will focus on learning the ins and outs of making Croissants.
As we know, making Croissants is not an
easy thing to take for granted. This time I will make Croissants from 2
different methods and also different recipes. For the first Croissant the
recipe was taken from Trans Luxury Hotel Bandung. The second recipe is based on
Antonio Bachour's book.
The difference between these two recipes, the first recipe is the dough only stored for approximately one hour in the freezer. For the second recipe the batter must be rested overnight.
