The third day of practice week.
This week as I told you in a previous blog,
this week we will focus on learning ins and outs of Croissants. Continuing
the story from blog yesterday, after making the dough from the first recipe,
we made the Croissants until the baked process but yeah the Croissants are
really not easy to make.
Yesterday's first experiment that
occurred with the dough from the croissants did not expand. Meanwhile, what was
obtained when a product failed to run three rounds was completed in front of
the restaurant.
Today I continue making the dough whose
recipe is based on Antonio Bachour's book. But it still failed. The thing that
becomes a challenge in making Croissants is in the folding technique. Because
the system used here is a manual system using a rolling pin.
