The last day of practice week this time.
Still with the Croissant story and its
difficulties, after several days of trying to make Croissants based on our own
knowledge, finally Mr. Ical today intervened to teach us how to make
Croissants.Starting how to stir the mixture, what speed is used, how to measure the
butter, how long it is in the rest, how to fold it, until it gets to the
baking.
The mistake that I realized was from the way to fold and how to mix the
dough. Where when folding the dough the end of the fold always faces us. Even during the proofing process, do not store croissants under the
air conditioner, because it makes the dough expand slowly.
